  • 1/4 cup honey
  • 1/4 cup water
  • 2 apples, cut into matchsticks
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1 large carrot, peeled and finely grated
  • 2 tablespoon mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 garlic clove, finely minced

Instructions

1. Preheat your oven to 425°F. Season the chicken thighs generously with kosher salt, pepper, smoked paprika, and garlic powder.

2. In a cast-iron or oven-safe skillet, heat the olive oil over medium heat. Sear the seasoned chicken thighs for 2-3 minutes per side, or until they develop a deep, golden-brown crust.

3. In a small bowl, whisk together the apple cider, honey, and water until well combined. Pour this mixture over the chicken in the skillet.

4. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F. Let it rest for 10 minutes before slicing.
