  • 1 ½ lbs boneless, skinless chicken thighs, cut into chunks

  • 1 tbsp olive oil

  • 1 cup long-grain white rice, rinsed

  • 2 ½ cups low-sodium chicken broth

  • 1 cup teriyaki sauce

  • 2 tbsp soy sauce

  • 2 tbsp honey

  • 1 tbsp brown sugar

  • 1 tsp garlic powder

  • ½ tsp ground ginger

  • ¼ tsp crushed red pepper flakes (optional for heat)

  • 1 cup frozen peas and carrots

  • 2 green onions, sliced (for garnish)

  • 1 tbsp sesame seeds (optional for garnish)


Instructions

  1. Sear Chicken: Heat olive oil in a large skillet or pot over medium heat. Add chicken chunks and cook for 5-6 minutes, or until browned.

  2. Add Sauce & Rice: Stir in teriyaki sauce, soy sauce, honey, brown sugar, garlic powder, ginger, and crushed red pepper flakes. Add rice and chicken broth.

  3. Simmer Covered: Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, until rice is tender and the liquid has been absorbed.

  4. Add Veggies: Stir in frozen peas and carrots, cooking for an additional 2-3 minutes until the veggies are heated through.

  5. Garnish & Serve: Top with sliced green onions and sesame seeds for extra flavor. Serve hot and enjoy!

Notes

  • For extra heat, feel free to increase the amount of red pepper flakes or drizzle some sriracha over the dish before serving.

  • For a slightly different twist, try using brown rice or jasmine rice in place of white rice.
