Ingredients

1 ½ lbs boneless, skinless chicken thighs, cut into chunks

1 tbsp olive oil

1 cup long-grain white rice, rinsed

2 ½ cups low-sodium chicken broth

1 cup teriyaki sauce

2 tbsp soy sauce

2 tbsp honey

1 tbsp brown sugar

1 tsp garlic powder

½ tsp ground ginger

¼ tsp crushed red pepper flakes (optional for heat)

1 cup frozen peas and carrots

2 green onions, sliced (for garnish)

1 tbsp sesame seeds (optional for garnish)
Instructions

Sear Chicken: Heat olive oil in a large skillet or pot over medium heat. Add chicken chunks and cook for 5-6 minutes, or until browned.

Add Sauce & Rice: Stir in teriyaki sauce, soy sauce, honey, brown sugar, garlic powder, ginger, and crushed red pepper flakes. Add rice and chicken broth.

Simmer Covered: Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, until rice is tender and the liquid has been absorbed.

Add Veggies: Stir in frozen peas and carrots, cooking for an additional 2-3 minutes until the veggies are heated through.

Garnish & Serve: Top with sliced green onions and sesame seeds for extra flavor. Serve hot and enjoy!
