  • Salt and pepper to taste

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  • Prepare the Chicken: Using a sharp knife, carefully slice a pocket into the side of each chicken breast, ensuring not to cut all the way through.
  • Stuff the Chicken: Stuff each chicken breast with roasted red peppers, spinach, and shredded mozzarella cheese. Use toothpicks to secure the chicken if necessary.
  • Season the Chicken: Rub both sides of the stuffed chicken breasts with olive oil. Sprinkle garlic powder, Italian seasoning, salt, and pepper evenly over the chicken.
