  • 2 cloves garlic (minced)

Instructions

Preparing the Sweet Potatoes

1. Preheat your oven to 400°F (200°C). Prick the sweet potatoes several times with a fork and place them directly on the oven rack.
2. Bake for 45-60 minutes or until tender.

Sautéing the Vegetables

3. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté for 2-3 minutes until fragrant.
4. Add sliced mushrooms and continue cooking for 5-7 minutes until browned.
5. Add fresh spinach and sauté for another 2-3 minutes until wilted. Season with salt and pepper.

Making the Creamy Filling

6. Reduce heat to low and add cream cheese to the skillet. Stir until melted and creamy.

Stuffing and Baking the Sweet Potatoes
