- 2 cups broccoli florets
- 2 cups carrots, sliced
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, chopped
- 1 block (14 oz) firm tofu, cubed or 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon black pepper
- Salt, to taste
- 1 lemon, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the vegetables: wash and chop the broccoli, carrots, bell pepper, zucchini, and red onion into bite-sized pieces.
- If using tofu, cube it; if using chicken, cut it into bite-sized pieces.
- On a large sheet pan, toss all the ingredients together with olive oil, soy sauce, garlic powder, paprika, black pepper, and a pinch of salt.
- Ensure the ingredients are evenly coated with the seasonings.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until vegetables are tender and caramelized, and protein is golden brown.
- Serve with a squeeze of fresh lemon juice over the top.
