Description

Sweet Pepper and Sausage Pasta is a quick and flavorful weeknight meal that combines Italian sausage, bell peppers, and pasta in a rich sauce.


Ingredients

  • 1 pound Italian sausage
  • 1/4 cup tomato paste
  • 2 tablespoon olive oil
  • 1 medium sweet onion, sliced
  • 2 medium bell peppers, sliced
  • 3 cloves garlic, thinly sliced
  • 1 tablespoon light brown sugar
  • 1 teaspoon dried oregano
  • 1 tablespoon balsamic vinegar
  • 8 ounce dry short-cut pasta
  • 1 teaspoon kosher salt
  • 1/2 cup reserved pasta water
  • 1/4 cup toasted breadcrumbs (optional)

Instructions

1. Cook Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, according to the package instructions. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

2. Cook Sausage: In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the sausage and cook, breaking it into small pieces, until browned. Stir in 1 tablespoon of tomato paste and cook for 1–2 minutes. Remove the sausage from the skillet and set it aside.

3. Sauté Vegetables: In the same skillet, add the remaining olive oil, the sliced onion, and bell peppers. Cook until the vegetables are softened, about 6–7 minutes. Stir in the garlic and cook for 1 minute.

4. Build the Sauce: Add the remaining tomato paste, brown sugar, oregano, and balsamic vinegar to the skillet. Stir and cook for 2 minutes. Return the cooked sausage to the skillet.

5. Combine Pasta: Add the cooked pasta and the reserved pasta water to the skillet. Toss everything together until the pasta is coated in the creamy sauce.

6. Serve: If desired, garnish the Sweet Pepper and Sausage Pasta with toasted breadcrumbs. Serve hot and enjoy!

Notes

This dish can be customized by using different types of sausage or adding additional vegetables like zucchini or mushrooms.
