1 packet taco seasoning

1 can black beans, drained and rinsed

1 cup sweet corn kernels (frozen or canned)

1 cup salsa or 1 can diced tomatoes

1 ½ cups shredded cheddar or Mexican blend cheese

1 cup crushed tortilla chips (optional)

Optional toppings: sliced green onions, sour cream, avocado


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large, oven-safe skillet, brown the ground beef over medium heat, breaking it up as it cooks. Drain any excess fat.

3. Add the taco seasoning and a splash of water, stirring to coat the meat evenly.

4. Stir in the black beans, corn, and salsa (or diced tomatoes). Let the mixture simmer for about 2 minutes.
