- 1 lb ground beef
- 1 can (16 ounce) refried beans
- 1 packet taco seasoning
- 1/4 cup water
- 6 large flour tortillas
- 1 can (10 ounce) red enchilada sauce
- 1 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: chopped onions, sliced black olives, sour cream
Instructions
- Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
- In a large skillet, brown the ground beef over medium-high heat until no pink remains, about 8-10 minutes. Drain excess fat, then add taco seasoning and water. Stir well and let simmer for 2-3 minutes until thickened.
- Mix the refried beans into the seasoned beef until well combined.
- Warm the tortillas in the microwave for about 15 seconds. Spoon approximately 1/3 cup of the meat-bean mixture onto each tortilla, fold sides over filling, and roll tightly. Place seam-side down in the prepared baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle both cheeses on top.
- Bake uncovered for 20-25 minutes, or until cheese is melted and bubbly. Let rest for 5 minutes before serving, adding optional toppings.
Notes
For a gluten-free version, use corn tortillas. For a vegetarian option, substitute ground beef with lentils or mushrooms and use dairy-free cheese.
