Ingredients

  • 4 large eggs

  • Salt to taste

  • Fresh parsley, chopped

Instructions

1. Heat olive oil in a skillet over medium heat.

2. Add diced zucchini and sliced mushrooms. Sauté until tender and lightly browned, about 5-6 minutes.

3. Sprinkle in garlic powder, salt, and pepper. Stir well.

4. In a separate bowl, whisk the eggs until well combined.

5. Pour eggs into the skillet with the vegetables and stir gently.
