Description
Delicious and Comforting White Chicken Chili
Ingredients
- 2 pound boneless, skinless chicken breasts
- 2 cans (15 ounce each) Great Northern or cannellini beans, rinsed and drained
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 can (4 ounce) diced green chilies
- 4 cup low-sodium chicken broth
- 4 ounce cream cheese, softened
- 1 tablespoon olive oil
- 1 1/2 teaspoon ground cumin
- 1 teaspoon dried oregano
- Fresh cilantro, avocado, sour cream, shredded cheese (for garnish)
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is softened and the garlic is fragrant, about 3-4 minutes.
2. Stir in the chicken breasts, ground cumin, dried oregano, and diced green chilies. Cook for 2-3 minutes to allow the flavors to blend.
3. Pour in the chicken broth and the rinsed and drained beans. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the chicken is cooked through and the flavors have melded together.
4. Remove the cooked chicken breasts from the pot and use two forks to shred the meat. Return the shredded chicken to the pot.
5. Stir in the softened cream cheese until it’s fully melted and the chili has a rich, creamy texture.
6. Ladle the white chicken chili into bowls and top with fresh cilantro, avocado, sour cream, and shredded cheese. Serve it hot and enjoy the comforting flavors!
Notes
To ensure your white chicken chili is a hit every time, consider these helpful tips:
– Adjust the Spiciness: If you prefer a milder chili, reduce the amount of diced green chilies. For a spicier kick, add a dash of hot sauce or extra chilies.
– Meal Prep and Storage: White chicken chili is an excellent make-ahead meal. The flavors actually improve over time, so feel free to prepare it a day or two in advance. When reheating, add a splash of broth or water to maintain the desired consistency.
– Freezer-Friendly: This chili freezes beautifully, making it a convenient option for busy weeknights. Simply let it cool completely, then transfer it to an airtight container or freezer-safe bag and freeze for up to 3 months.
