Instructions

1. Combine the ground turkey, ricotta, Parmesan, breadcrumbs, egg, garlic, lemon zest, parsley, oregano, red pepper flakes, salt, and pepper in a large bowl. Mix gently until just combined.

2. Scoop the mixture and shape into 1 1/2-inch balls. Heat olive oil in a skillet over medium heat and cook the meatballs until golden brown, about 8-10 minutes. Set aside.

3. Bring a pot of salted water to a boil and cook the rigatoni according to package instructions until al dente. Reserve 1/2 cup of cooking water, then drain and set aside.
