- 1 ¼ lb sirloin steak, cut into ½ inch cubes
Instructions
- Cook the Potatoes:
Heat 2 tablespoons of ghee or butter along with the olive oil in a large skillet over medium heat. Add the cubed potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Season with salt and pepper to taste, then transfer the potatoes to a plate and set aside. - Prepare the Steak Bites:
In the same skillet, add the remaining ghee or butter. Increase the heat to medium-high. Add the sirloin steak cubes in a single layer (cook in batches if needed to avoid overcrowding). Sear the steak for 2-3 minutes without stirring to get a nice crust, then flip and cook for another 2-3 minutes until browned and cooked to your preferred doneness. Season with sea salt, black pepper, dried thyme, and oregano. - Add the Garlic:
Reduce the heat to medium. Add the minced garlic to the skillet and stir for about 30 seconds until fragrant. Be careful not to burn the garlic. - Combine and Serve:
Return the cooked potatoes to the skillet and toss everything together until well combined and heated through. Adjust seasoning if needed. - Serve:
